St Patrick’s Day wouldn’t be the same without these Green Pancakes! These light, fluffy and deliciously healthy pancakes get their gorgeous green hue from Botanica’s Perfect Greens powder.

St Patrick’s Green pancakes
Ingredients:
- 1½ cups gluten free flour
- 2 scoop Perfect Greens powder
- 1 tsp matcha
- ½ tbsp baking powder
- ¼ tsp salt
- 1 cup soy milk
- 2 eggs or flax egg
- 1 tbsp coconut sugar
- 1 tsp vanilla
- 1 tbsp olive oil
Directions:
- Whisk dry ingredients together and set aside.
- Whisk wet ingredients and add dry to wet. Switch to a spatula and gently mix until no dry ingredients are left.
- Add a splash more milk if mixture seems to thick.
- Heat a large pan over medium-high heat and spray with non-stick spray or coat with oil or butter.
- Use an ice-cream scoop to evenly measure out batter.
- Wait for bubbles to form and flip. Finish with remaining batter.
- Serve with toppings of your choice.
