Protein Butterscotch Cookies

These Protein Butterscotch Cookies, made with Perfect Protein Vanilla, are the perfect blend of indulgence and nourishment. The rich butterscotch chips and a touch of cinnamon create a warm, comforting flavor, while the protein powder adds a boost of goodness in every bite. With a satisfying texture from the oats and sesame seeds, these cookies are as delicious as they are wholesome. Ingredients:

  • 1 egg
  • ½ cup brown sugar
  • ¼ cup coconut oil melted
  • 1 tsp vanilla
  • ¾ cup oat flour
  • ½ cup gluten free oats
  • ¼ cup Perfect Protein Vanilla
  • ½ tsp cinnamon
  • ½ tsp baking soda
  • ¼ tsp sea salt
  • ½ cup butterscotch chips
  • ¼ cup sesame seeds
  • Flaky sea salt

Directions:

  1. Preheat oven to 350 degrees and line a cookie sheet with parchment paper or silicone non-stick mat.
  2. Add oil, egg, sugar and vanilla to a large bowl and whisk vigorously to combine.
  3. In a separate bowl, whisk together dry ingredients.
  4. Add dry to wet, combining until almost combined. Mix in 3/4 of the butterscotch chips until fully mixed.
  5. Use an ice cream scoop to form balls of dough. Add sesame seeds to a small bowl.
  6. Roll dough into seeds and place on the cookie sheet at least 2 inches apart as they will spread
  7. Lightly flatten each ball and press extra chips onto the top.
  8. Bake for 12-14 minutes until lightly golden brown.
  9. Let cookies cool completely. Enjoy! Store in an airtight container.
