Peanut Butter & Jelly Ice Cream Bites

The easiest, tastiest no-bake snacks you won’t be able to stop reaching for. Bonus: they’re packed with our Vanilla Perfect Protein, giving them a healthy twist, perfect for satisfying your sweet cravings.

You will use:

  • Ice cream scoop
  • Freezer, cookie sheet, parchment paper

Ingredients:

  •  cups Greek yogurt
  •  cups fresh raspberries
  • ¼ cup peanut butter
  • ¼ cup Botanica Perfect Protein Vanilla
  • ½ tsp vanilla
  • 2 tbsp maple syrup
  • 1¼ cup dark chocolate
  • 1 tsp olive oil
  • flaky salt

Instructions:

  1. Place parchment paper onto a cookie sheet. Make sure there’s enough space in your freezer for the cookie sheet to lie flat
  2. To a large bowl, add raspberries and yogurt. Use a fork to mash raspberries into yogurt.
  3. Add peanut butter, protein powder, vanilla and maple syrup. Stir until well combined.
  4. Use an ice cream scoop to measure out bites. Place in the freezer until hard. Approximately 2 hours.
  5. Melt chocolate in the microwave in 30 second increments until fully melted.
  6. Stir in olive oil.
  7. Coat yogurt bites on all sides. Use a fork to retrieve from the chocolate. Tapping to remove any excess chocolate
  8. Sprinkle with flaky salt.
  9. Place back into the freezer to harden.
  10. Allow them to thaw for a few minutes before eating. Enjoy!

Notes:

  • Blueberries and strawberries would also be a great option.
  • Any nut or seed butter will work!
  • Use milk or white chocolate if you prefer.
  • Coconut oil also works works very well.
