Serves 4
Ingredients:
- 4 ½ cups sliced frozen bananas (6 medium)
- 6 tbsp Perfect Protein Chocolate
- ¼ cup plus 2 tbsp natural crunchy peanut butter
- 4 tbsp cocoa powder
- 1 tsp vanilla extract
Optional:
- 1-2 tbsp maple syrup if you are wanting a sweeter nice cream.
Peanut butter swirl:
- 2 tbsp natural crunchy peanut butter
- 1 tsp coconut oil
- 2 tbsp peanuts
- Chocolate sauce for drizzle (optional)
Directions:
- Peel and slice the bananas into medallions and place on a lined cookie sheet with parchment paper and let freeze overnight or for at least 4 hours or until fully frozen through.
- Place the frozen bananas slices, Botanica Perfect Chocolate Protein powder, peanut butter, cocoa powder, and vanilla extract in a high speed blender. Turn on high speed to turn the fan motor on as well and use tamper to push down the ingredients to form a thick ice cream.
- Using a spatula, scoop out ice cream into a container for freezing.
- Melt peanut butter and coconut oil in the microwave safe bowl for 30 seconds. Mix well and pour over the nice cream mixture. Use the back of a spoon to create a swirl effect on the top of the nice cream.
- Sprinkle Nice cream with peanuts and place into the freezer for 2-3 hours until set.
- Scoop out into a bowl or waffle cone. Top with more peanuts if desired.
- If nice cream is hard, leave on the counter for 15-20 mins until softened a little for scooping.
Notes:
Must be a high powered blender like a Vitamix or Blendtec. This recipe will blow out motors of non high powdered blenders.
