Carrot Cake Protein Waffles

Recipe makes one large serving

Macros per serving: 440 cals - 16g fat - 51g carbs - 23g protein

Ingredients:

  • ½ banana
  • ⅓ cup sprouted oats
  • ½ cup + 1 tbsp soy milk
  • ½ scoop Perfect Protein Elevated Brain Booster
  • ¼ tsp baking powder
  • ⅓ cup shredded carrot
  • 1 tbsp chopped walnuts
  • 1 tbsp shredded coconut
  • 1 tsp cinnamon

Directions:

  1. If using a waffle maker, begin to preheat it to desired temperature. This will be machine specific.
  2. To a high speed blender add: banana, sprouted oats, soy milk, Perfect Protein Elevated Brain Booster, and baking powder. Blend until super smooth, 1-2 minutes.
  3. Pour batter into a mixing bowl and add-in: shredded carrot, chopped walnuts, shredded coconut, cinnamon, and a touch of salt. Mix together well. Depending on the size of your waffle maker, this should make roughly 4 waffles.
  4. Add the batter to the preheated waffle maker and cook until browned.
  5. Plate and top with vegan greek yogurt, maple syrup, and additional toppings like walnuts, cinnamon, and coconut if desired. Enjoy!
