- 1 ripe banana
- 1 egg
- 1 tbsp olive oil
- ¼ cup apple sauce
- ½ tsp vanilla
- ¼ cup milk
- ⅓ cup oats
- ¼ cup Botanica Perfect Protein Vanilla
- ¼ cup almond flour
- ½ tsp baking powder
- ½ tsp cinnamon
- ¼ tsp ginger
- ¼ tsp nutmeg
- ¼ tsp salt
- ½ cup apple diced
Optional Glaze Ingredients
- 2-3 tbsp yogurt I used Rolling Meadows
- 1-2 tsp maple syrup
Instructions
- Preheat oven to 350. Grease 1 large ramekin and set aside.
-
Mash the banana in a medium sized bowl.
-
Add egg, olive oil, apple sauce and vanilla and whisk to combine.
-
In a separate bowl, whisk together dry ingredients. Fold dry into wet until almost completely combined and then add milk. Stir until the batter is smooth.
-
Stir in 3/4 of the diced apple. Transfer to ramekin, smoothing out the top before adding the remaining chopped apple.
-
Place in preheated oven for 30 minutes. The centre should come out clean if testing with a toothpick. Set aside to cool while you make the glaze.
-
Stir yogurt and maple syrup together until combined. Drizzle over the oats and enjoy!
