Elevate your breakfast with this protein granola, featuring freeze-dried strawberries and chocolate chunks. Perfect with yogurt and berry compote, or even jam. For a protein boost, I mix in Botanica’s Perfect Protein Vanilla, crafted from whole foods like organic brown rice, quinoa, and coconut milk.

Ingredients:
- 2 cups old fashioned rolled oats
- 1 cup walnuts
- ½ cup pumpkin seeds
- ¼ cup shredded coconut
- ⅓ cup ground flax seeds
- ⅓ cup maple syrup
- ⅓ cup coconut oil, melted
- 1 Tbsp vanilla extract
- 2 Tbsp runny tahini
- 1 tsp cinnamon
- ½ tsp ground ginger
- ½ tsp salt
- 2 scoops Perfect Protein Vanilla
- ¾ cup freeze-dried strawberries
- ¼ cup chocolate chunks
- 1-2 Tbsp dried rose petals (optional)
Directions:
- Preheat the oven to 325°F.
- Mix oats, walnuts, pumpkin seeds and shredded coconut together in a large bowl.
- Soak ground flax seeds with ⅔ cup water in a medium bowl. Add maple syrup, oil, vanilla, tahini, spices and salt. With a whisk, slowly and thoroughly mix in Perfect Protein Vanilla.
- Pour this mixture over the dry ingredients and use your hands (or a wooden spoon) to mix until well combined.
- Bake for 35-45 minutes until golden, gently tossing the granola halfway through.
- Once granola has cooled, add in strawberries, chocolate and rose petals. Serve with your yogurt of choice and fresh fruit or fruit compote. Enjoy!
