Ube Mochi Brownies
Ingredients:
- 4-8 oz Botanica Perfect Protein Elevated Anti-inflammatory
- ¼ cup of Plant-based Butter, melted
- ½ cup of Sugar or plant alternative
- 2 eggs
- 2 cups of glutinous rice flour (mochiko flour)
- 1 cup canned coconut milk
- 2 tbsp dehydrated ube powder
- 1 tsp baking powder
- 1 tbsp ube extract
- 1 tsp vanilla
Directions:
- Whisk mochi flour, baking powder, Perfect Protein, ube powder, sugar together.
- Whisk together eggs, plant based butter, vanilla, ube extract together
- Combine all ingredients into one bowl and stir.
- Add coconut milk and mix.
- Pour into a lined baking pan. Bake for 20 minutes at 375º F.
- Dust more ube powder on top. Slice and enjoy!
Note: If you use other Perfect Protein powder without turmeric, you can add 8 oz (1 scoop)
