Ingredients:

1/2 cup of Perfect Protein Vanilla

1 cup cooked quinoa (cooled)

1 cup oats (rolled or quick oats)

1/2 cup almond flour (or whole wheat flour)

1/2 tsp baking soda

1/2 tsp cinnamon

1/4 tsp nutmeg

1/4 tsp salt

1/4 cup maple syrup

1/4 cup coconut oil (melted) or butter

1 egg (or flax egg for vegan)

1/2 cup grated carrot
-
1/4 cup raisins (optional)
Directions:
- Preheat your oven to 350°F (175°C).
- In a large bowl, combine oats, almond flour, protein powder, baking soda, cinnamon, nutmeg, raisins, and salt.
- In a separate bowl, whisk together maple syrup, melted coconut oil, and egg.
- Add the cooked quinoa, grated carrot, and wet ingredients to the dry mixture. Stir to combine.
- Scoop tablespoon-sized portions onto a baking sheet.
- Bake for 12-15 minutes or until the cookies are golden brown around the edges. Enjoy!
