These Homemade Granola Bars are a powerhouse of nutrition, made with Perfect Protein Vanilla to keep you energized and satisfied. Ingredients:
- ¾ cup pumpkin seeds
- ¼ cup sunflower seeds
- ¼ cup chia seeds
- ¼ cup hemp seeds
- ½ cup sliced almonds
- ½ cup oats
- ¼ cup ground flax
- 2 tbsp psyllium husk
- ¼ cup Perfect Protein Vanilla
- 1 tsp cinnamon
- ½ tsp salt
- ½ cup almond butter or any nut/seed butter of choice
- 1 tsp vanilla
- ½ cup honey
- 2 tbsp olive oil
Optional Toppings
- ½ cup dark chocolate chips
- ¼ cup almond butter
- Flaky salt to finish
Directions:
- Preheat oven to 320 convection.
- Line a 9×12 deep sided baking sheet or dish with parchment paper ensuring there is an overhang for easy removal.
- Add dry ingredients to a bowl and stir to combine.
- Add almond butter, olive oil, honey and vanilla to a small pot and heat gently over medium low heat. Stir to combine.
- Pour wet over dry and stir to coat. Being careful to get all the dry parts combined.
- Press evenly and firmly into the pan using a rubber spatula.
- Place in the oven to bake for 30-35 minutes. The surface should be golden brown and dry to the touch.
- Allow it to cool on a wire rack.
- Spread almond butter on top of granola.
- Melt chocolate in 39 second increments until til smooth. Spread chocolate over almond butter. It’s OK if almond butter and chocolate start to meld together.
- Place in the freezer to allow chocolate to harden.
- Once hard, remove from the freezer and sprinkle with flaky sea salt.
- Place on a cutting board and cut into bars.
- Store them in the freezer. Enjoy!
